In fact, the part with rump (more valuable) is used, which makes for a visibly higher and particularly soft speck.
Like all products of Prosciuttificio Crosare, its raw material is of high quality.
Selected and controlled pork sourced mainly from Germany or Austria is processed by our staff using a special tanning process that we have devised and perfected over the years.
Subsequently, a natural smoking with beech wood makes this product one of our excellences.
Maturation of a minimum of 6 months, finally gives the typical pinkish color, with pinkish-white parts.
The taste is sweet, with a slight smoky note, making it truly irresistible.
